Oyster Mushroom Chicken
Savour this simple yet homely chicken dish embellished with oyster sauce and mushrooms!

Step 1 - Fry garlic, ginger and oyster sauce
- In a pan on medium-high heat, heat 2 Tbsp vegetable oil and fry minced garlic and sliced ginger for 1 to 2 minutes, until fragrant.
- Once fragrant, add 6 Tbsp oyster sauce and 4Tbsp of water. Mix well and add chicken pieces.
Step 2 - Stir-fry chicken
Stir-fry chicken for 5 minutes, until slightly cooked before adding mushrooms, potato cubes and remaining water.
Season to taste with salt, white pepper and sugar. Let it simmer on medium heat,until chicken and potato is tender.You can replace chicken pieces with chicken wings and drumsticks
For a thick silky gravy, mix 1 tsp cornstarch with 1 Tbspwater in a cup before pouring into pan.You can also add tau kwa (firm tofu) to the dish to add more texture to the dishShiitake mushrooms helps to naturally balance hormones and provide you with a vitamin B boost
Garnish and serve!
Transfer oyster mushroom chicken in serving bowl and garnish with coriander leaves. Serve hot.
