Pandan Banana Ice Cream

Step 1 - Boil pandan leaves and blend pandan juice
- In a pot of boiling water, add pandan leaves and boil for a minute.
- Remove from heat.
- In a blender, add boiled pandan leaves and blend with 50 ml water for 30 seconds.
- Strain pandan juice and set aside to cool.
Step 2 - Blend bananas with pandan juice
- In a clean blender, blend pandan juice with frozen banana chunks.
Freeze longer for a harder, richer texture. Freeze shorter for a softer texture, similar to a soft serve!
Garnish and serve!
To serve, fill the bottom of ice cream glasses with peanut brittle, then a scoop of soft banana ice cream, then a layer of peanut brittle and grated coconut, followed by another scoop of ice cream and garnish evenly with the toasted grated coconut and peanuts.
