Step 1 - Boil and mash potatoes and peas
- In a pot, fill ¾ full with water and bring to boil. Once boiling, boil potatoes and peas for 15 minutes. Remove and drain, then lightly mash and set aside.
Step 2 - Fry pav bhaji curry
- In a pan on medium heat, add butter and melt. Once melted, add onion, capsicum, tomatoes, 1 Tbsp cumin powder, 2 Tbsp pav bhaji powder, 1 Tbsp chili powder, and 2 Tbsp coriander powder and fry until soft, for about 2-4 minutes.
Step 3 - Mash the mixture
- Add potato and pea mash and mix well to combine, then remove from heat.
Step 4 - Toast bread rolls
- Toast bread rolls and serve with vegetable curry.
Plate and serve!
