Ingredients

This Indian dish is a top seller on the streets of Mumbai, India - a spicy curry with mixed vegetables that goes great with a soft bread roll!

Let's start cooking!

Step 1 - Boil and mash potatoes and peas

  • In a pot, fill ¾ full with water and bring to boil. Once boiling, boil potatoes and peas for 15 minutes. Remove and drain, then lightly mash and set aside.
Fried tomatoes, onions and capsiums

Step 2 - Fry pav bhaji curry

  • In a pan on medium heat, add butter and melt. Once melted, add onion, capsicum, tomatoes, 1 Tbsp cumin powder, 2 Tbsp pav bhaji powder, 1 Tbsp chili powder, and 2 Tbsp coriander powder and fry until soft, for about 2-4 minutes.

Step 3 - Mash the mixture

  • Add potato and pea mash and mix well to combine, then remove from heat.
Toasted bread on pan

Step 4 - Toast bread rolls

  • Toast bread rolls and serve with vegetable curry.

Plate and serve!
