Step 1 - Make pie tee batter

  • In a bowl, mix rice flour, tapioca flour, plain flour, ¼ tsp salt, â…› tsp slaked lime and eggs until well mixed.
  • Gradually add 250 ml water and whisk again.

Step 2 - Strain pie tee batter

  • Using a sieve, strain the batter into another bowl to remove any lumps.

Step 3 - Make kueh pie tee cups

  • In a pot, heat up enough vegetable oil. When oil is hot, place the pie tee mould into the hot oil for 1 to 2 minutes, until it is heated through.
  • Dip the hot mould in the batter, lift it up and lower it into the pot of hot oil for 1 to 2 minutes, until golden brown and crisp.
  • Remove and drain on a paper towel-lined plate.
  • In a pan on medium-high heat, heat 5 Tbsp vegetable oil and fry chopped garlic for 1 to 2 minutes, until fragrant.

Step 4 - Fry garlic

  • In a pan on medium-high heat, heat 5 Tbsp vegetable oil and fry chopped garlic for 1 to 2 minutes, until fragrant.

Step 5 - Fry prawns with tau cheong

  • In the same pan, add tau cheong and prawns, fry for 2 to 3 minutes.
You can add thinly sliced long beans and carrots to this dish

Step 6 - Make filling

  • Add in the turnip to the pan, stir well. Pour in 1 L water and bring to a boil.
  • Add 2 Tbsp light soy sauce and ½ tsp thick soy sauce and 3 ½ Tbsp sugar. Season to taste with salt.
  • Simmer on medium heat until turnip is soft and gravy dries up.
Pie tee is similar to the traditional popiah, you may use the same filling

Spoon and serve!

Spoon the fillings into each pie tee case. Garnish with fresh coriander leaves, sliced omelette, grounded peanuts and serve immediately.
