Prata lovers will enjoy this delicious reinvented prata roll.

Step 1

  • In a bowl, mix all dry spices and yogurt with the chicken breast.
    Set aside for 10 mins.

  • Heat up oven at 180°C.

  • Place marinated chicken breast in a baking pan, lined with foil.
    Drizzle olive oil on the pan and the chicken breast.

  • Bake till chicken breast is cooked through. Remove from oven.

  • Slice cooked chicken breast to ½ inch thickness.

  • In a bowl, add avocados, red onion, tomato, coriander, green chilli, garlic, lime and season with salt and pepper to taste. Mix well. Set aside.

  • Heat up pan under low heat.

  • Place thawed prata one at a time to heat up till cooked through. Remove. Set aside.

Only thaw each prata for a few minutes before cooking it as leaving it too long will make it too soft to handle.

To Assemble

  • Place a piece of prata onto a clean plate, take 2 tsp mayo and spread over prata.

  • Add sliced romaine lettuce and sliced red cabbage.

  • Add cooked chicken. Gently roll the prata. Secure it.

Try not to overcook the prata for too long. It’s harder to roll when it is crispy.

Serve with guacamole on the side.
