Ingredients
  • Sauce ingredients:
  • 200 grams Dashi
  • 40 grams Light soy sauce
  • 40 grams Sweet Japanese sauce
  • Tofu ingredients:
  • 1 block Silken tofu (soft tofu) – cut into 4
  • 20 grams Potato starch
  • 400 grams Vegetable oil for deep frying
  • Garnish ingredients:
  • 1 inch Daikon radish, grated
  • 1 stalk Spring onion, finely minced
  • Katsuobushi (dried bonito flakes)
Method
  1. Put dashi, soy sauce and sweet sauce in a saucepan. Leave it on high heat until boiling, then set it aside for later use.
  2. Drain the tofu by wrapping tofu with 2-3 layers of paper towels and patting it very dry. You can leave the tofu resting for 10 minutes.
  3. In a saucepan, heat up enough oil to submerge half a tofu.
  4. Coat the tofu with potato starch and deep fry until it turns light brown and crispy.
  5. Remove the tofu and drain excess oil on a plate lined with paper towels.
  6. To serve, place the tofu in a serving bowl and pour the sauce on the tofu. Garnish with grated daikon, green onion and Katsuobushi.
