  • 2 Red apples
  • Lime juice
  • 2 Eggs
  • 50 grams soft Brown sugar
  • 50 millilitres Grapeseed oil or Vegetable oil
  • 2 teaspoons Rum
  • ½ teaspoon Baking powder
  • 60 grams ground Almonds
  • 60 grams Plain flour
  • ¼ teaspoon ground Cinnamon
  • Pinch of Salt
  1. Preheat the oven to 170C
  2. Peel, core and cut the apples into quarters. Slice each third thinly. Set aside
  3. In a bowl, whisk the eggs until fluffy, then add the sugar and whisk together
  4. Add the grapeseed oil to the beaten eggs, then sift the flour, ground almonds, baking powder and ground cinnamon in with a pinch of salt
  5. Fold the mixture until even and then transfer to a greased 12-hole muffin tray
  6. Top with the sliced apples and some extra brown sugar and bake for 25-30 minutes
