Apple Mango Crumble with White Chocolate-Coconut Sauce

  • For the crumble topping:
  • 1 cup Rolled oats
  • 1 cup Plain flour
  • 1 cup Light brown sugar
  • 1 cup Butter, diced and kept cold
  • A pinch of Salt
  • For the filling:
  • 3 cups peeled and diced Apple
  • 2 cups diced Mango
  • 2½ tablespoons Cornflour
  • 2 teaspoons Cinnamon
  • For the sauce:
  • 1 cup White chocolate, chopped
  • 1 cup Coconut milk
  1. Prepare a 9” x 9” baking dish and preheat oven to 200°C. To make the filling, stir all the filling ingredients together, making sure the cinnamon and cornflour are evenly distributed. Spoon into the baking dish and even out with a large spoon
  2. Make the crumble topping by rubbing the cold butter cubes with the flour, sugar, oats and salt until it looks like chunky wet sand. Spread evenly on top of the fruit filling, packing down lightly. Bake in the oven for 25-30 minutes, until the topping is golden brown and the fruit filling is thick and bubbling
  3. In the meantime, heat the coconut milk until it’s just about to boil. Pour over the white chocolate and leave to sit for 2-3 minutes so the chocolate melts. Stir until smooth
  4. Serve the crumble with the creamy white chocolate-coconut sauce poured over
