Try this quick and easy potato recipe by Darren Robertson from Darren Robertson's Charcoal Kitchen.

  • 8 small Potatoes (scrubbed)
  • 3 pieces of Jerusalem Artichokes (scrubbed)
  • 5 Garlic cloves
  • Zest of half a Lemon
  • 1 tablespoon Olive oil
  • 10 grams Butter
  • 2 sprigs of Thyme
  • A squeeze of Lemon before serving
  1. Grab a couple of sheets of tin foil and an A4 sized sheet of non stick paper
  2. Sit the vegetable on the paper and foil bring up the sides and add all the ingredients
  3. Fold over the foil to form a little parcel. Cook on the BBQ for 30 mins
  4. Remove, season with a little lemon juice, wait for it to cool a little before eating.e, wait for it to cool a little before eating
