Asian Style BBQ Chicken on a Bed of Noodles

  • Yield 6 servings
  • 6 whole Chicken legs (deboned) or 4 Chicken breast meat with skin on
  • 1 large packet of Flat Rice noodles soaked in boiling water until cooked
  • 1 cup Bean sprouts or Pea shoots
  • ½ Japanese Cucumber, deseeded and cut into long juliennes
  • 2 Spring onions
  • 1 Red chilli chopped for garnish
  • 4 tablespoons Sesame oil
  • 2 tablespoons Soy sauce
  • Marinate and ground ingredients for Chicken
  • ¼ cup Fish sauce
  • 1 large White onion
  • 2 cloves Garlic
  • 1 centimetre Ginger
  • 1 stick Lemongrass
  • ¼ cup Mint
  • 1 cup Thai Basil
  • 2 Bird's eye chilli
  • 2 tablespoons Kicap manis [Sweet soy sauce]
  • 1 cup Coconut water/Mango/ Pineapple juice
  • 1 teaspoon Ground Black pepper
  1. In a blender blitz together all the ground ingredients for the marinate
  2. In a big bowl add in cleaned chicken along with the marinate, mix well and let it sit in the marinate for at least 30 minute. Over night is better
  3. On a grilling pan, heat up the pan until smoking hot, place chicken skin side down and let it sit for at least 3 minutes before turning it over. Repeat 3 – 4 times until chicken is tender and cooked through. Set a side on a baking tray and let it sit for a while before cutting to serve
  4. In another big bowl, add in cooked flat noodles, along with sesame oil, soy sauce chopped red chillies, cucumber, spring onions and bean sprouts. Mix well
  5. Slice up chicken into strips and place onto rice noodle and serve
