Asian Style Roast Beef

  • 1 kilogram Australian Brisket (with fats)
  • 3 Red onions, cut in halves
  • 1 Spring onion sprig (white parts separated)
  • 1 Cinnamon stick
  • 3 Star anise
  • 5 Cloves
  • 2 roasted Black garlic cloves
  • 125 grams Bulgogi (Korean grilled beef) sauce
  • Water
  • Salt
  • Pepper
  • Man Tou (Chinese steamed buns), to serve (Optional)
  1. Preheat the oven to 200°C
  2. Using a roasting pan, heat it over the stove with some cooking oil, sear all sides of the beef for color. Remove and rest, then in the same pan sauté the red onions, the white parts of the spring onions with cinnamon, star anise, cloves and roasted black garlic. Save the remaining spring onions on the side
  3. When fragrant and the red onions are charred, add in the bulgogi sauce and some water to cover the beef. Season with salt and pepper to taste
  4. Turn off the heat, return the beef whole in with the liquid in the pan, make sure beef is submerged. Cover with aluminum foil and roast in the oven for about 1 hour 30 minutes
  5. Once cooked, remove the beef and allow to rest 15 to 20 minutes, strain the sauce into a pan and thicken the consistency
  6. When consistency is of a glaze then turn off the heat and place the beef back into the sauce pan to glaze with the sauce
  7. Slice the beef thinly and serve with the remaining sliced spring onions
  8. Steam man tou in oven until soft for a couple of minutes and serve together
