Ingredients
  • Pickled bean sprout
  • Pickled daikon
  • Pickled mustard green
  • Pickled lokio (baby garlic chives)
  • Fresh cucumber, sliced
  • Peanut, dry roast and crushed
  • Peanut sauce
  • Kerupuk mie
  • Garnish
  • Radicchio
  • Kemangi (lemon basil)
  • Baby Romaine lettuce
  • Fresh cucumber, sliced
  • Pickled Vegetables
  • Bean sprout
  • Daikon, julienned
  • Mustard green, sliced
  • Lokio
  • Water
  • Vinegar
  • Salt
  • Sugar
  • Peanut Sauce
  • 100 grams Peanut, dry roast and de-skin
  • 50 grams Peanut, fried
  • 30 grams Red curly chilli, fried
  • 5 grams Red small chilli
  • Sugar to taste
  • Palm sugar to taste
  • Salt to taste
  • 50 millilitres Vinegar
  • 50 millilitres Water
Method
  1. Pickled Vegetables:
  2. Mix water, vinegar, salt, sugar together.
  3. Soak all the raw vegetables separately in the mix.
  4. Rest it for a day. To be used immediately.
  1. Peanut Sauce:
  2. Blend all ingredients into fine paste.
  1. To mix:
  2. In a mixing bowl, mix all the pickled vegetables, sliced fresh cucumber and set aside.
  3. Arrange the garnish neatly on the serving plate.
  4. Then placed the mix on the plate, pour the peanut sauce on top and sprinkle with crushed peanut.
  5. Put some kerupuk mie and sliced fresh cucumber.
