Asparagus Salad with Creamy Avocado Dressing

Ingredients
  • Dressing:
  • 1 ripe Avocado
  • 60 millilitres (¼ cup) fresh Lime or Lemon juice
  • 60 millilitres (¼ cup) Water
  • 2 Green onions, sliced
  • 22 millilitres (1½ tablespoon) chopped fresh Tarragon
  • 45 millilitres (3 tablespoon) Extra virgin Olive oil or Avocado oil
  • 10 millilitres (2 teaspoons) Sugar
  • Salt & Pepper
  • Salad:
  • 450 grams (1 lb) fresh Asparagus
  • 6 Radishes
  • 1 litre (4 cups) Spring greens
Method
  1. For the dressing, puree all of the ingredients until smooth and season to taste. Chill until ready to serve (the dressing will keep for up to 4 days, refrigerated)
  2. For the salad, trim the asparagus and blanch it for about 3 minutes in boiling, salted water, until tender. Drain and rinse to cool
  3. Arrange the salad greens on a platter, and top with the asparagus and radishes. Spoon the dressing over and serve
