Ingredients
  • 2 Salmon steaks
  • 6-8 Lady’s fingers (Okra), trimmed
  • 6 Cherry tomatoes
  • 6 tablespoons Cooking oil
  • Coriander leaves, to garnish
  • Spice Paste:
  • 100 grams roughly chopped Shallot
  • 5 cloves Garlic
  • 2 stalks Lemongrass, outer layer removed
  • 10 grams Belacan (Shrimp paste), toasted
  • 15 grams Galangal (blue ginger), peeled
  • 5 red chillies, stalks removed
  • Sauce:
  • 5 tablespoons Tamarind juice
  • 500 millilitres Water
  • 1 tablespoon Sugar
  • ¼ teaspoon Salt
  • ½ teaspoon Fish sauce
Method
  1. Pound or blend the spice paste ingredients together until smooth. Heat up the oil in a large pot over a medium heat, and fry the spice paste until fragrant. This takes about 5 minutes
  2. Add all the sauce ingredients and bring to a boil. Turn the heat down, then add the lady’s finger, tomatoes, and salmon steaks and simmer for 10 minutes, until the fish is just cooked
  3. Garnish with fresh coriander and serve
