Avocado Parcels with Chocolate Sauce

  • 2 ripe Avocados, roughly chopped
  • ½ packet (125 grams) Cream cheese
  • 12-14 tablespoon Icing sugar
  • 1 Egg
  • 90 millilitres Milk
  • 60 millilitres Water
  • 100 grams Flour
  • 1 tablespoon melted Butter
  • 1 tablespoon Sugar
  • For the sauce:
  • 90 millilitres Water
  • 6 tablespoons Caster sugar
  • 4 tablespoons Cocoa powder
  • Pinch of Salt
  1. First, make the filling. Using an electric handheld whisk, whip the cream cheese until light and fluffy. In a separate bowl, lightly mash the avocado then add it to the cream cheese, along with the icing sugar. Whip, first slowly to incorporate everything then on a high speed, until light and fluffy. Cover with cling film and chill in the refrigerator for at least 30 minutes
  2. Next, prepare the crepe batter. Whisk the flour, egg, water, milk, melted butter, sugar and salt together until smooth. Leave to rest in the refrigerator for 30 minutes as well
  3. In the meantime, prepare the chocolate syrup Heat the cocoa, water, sugar and salt in a pan over medium heat until it reaches a light simmer and everything has dissolved. Set aside
  4. Heat up a frying pan or griddle with 1 teaspoon of vegetable oil or butter, wiping away any excess. Pour some crepe batter in and swirl to coat the pan. Cook for 1 minute on each side, and continue until you have 6 crepes, letting them cool. Next, dollop some avocado filling onto each crepe and roll up into a parcel. Serve drizzled with chocolate syrup
