Ingredients
  • 1 whole Chicken
  • 10 cloves Garlic, peeled
  • 1 thumb of Galangal
  • 1 thumb of Ginger
  • 3 sticks of Lemongrass
  • 2 thumbs of Turmeric
  • 12 Shallots, peeled
  • 4 Lime Leaves
  • 5 tablespoons Kicap Manis (Sweet Soy Sauce)
  • 10 Candlenuts
  • Tamarind
  • Cussed Coriander Seeds
  • Oil for cooking
  • Salt and Pepper and Sugar
  • Butter
  • Brick and aluminium foil
  • Sambal Halilitan
  • Handful of Orange Chilli
  • 5 Shallots
  • 2 fresh Tomatoes
  • Salt and Pepper
  • 3 small Limes
  • Handful of Thai Basil
  • 2 tablespoons Sugar
Method
  1. Add all the above ingredients except the soy sauce and pulse until the ingredients come together into loose marinade consistency
  2. Take 2/3 of the mixture and marinate chicken for at least 30 minutes
  3. Add soy to the remaining mixture and use to baste while the chicken is cooking
  4. Place the chicken on a preheated grill (with the brick on top of the chicken to weigh it down) for about 8 minutes on each side
  5. Sambal: Bash all ingredients together in a mortar and pestle until it comes together in a rough consistency
