Ingredients
  • 1 kilogram Pork spareribs
  • 20 grams Yu Zhu
  • 10 grams Red dates
  • 20 grams White peppercorns
  • 100 grams Coriander roots
  • 50 grams Whole garlic
  • 3 litres Water
  • 1 packet of Bak Kut Teh spices
  • 2 Whole Star anise (ba jiao)
  • 1 Cinnamon bark (gui pi)
  • Seasoning:
  • 1 tablespoon Black bean soy sauce
  • 2 tablespoons Salt
  • 1 tablespoon Sugar
  • 1 tablespoon Sesame oil
Method
  1. Chop pork spareribs into pieces and rinse clean
  2. Boil for 5 minutes. Drain and set aside
  3. Put fragrant yu zhu, red dates, black peppercorns, whole star anise, cinnamon bark, and whole garlic in cloth bag. Seal tight
  4. Boil bag of ingredients in water over moderate heat for 30 minutes
  5. Add pork spareribs and continue boiling for another 60 minutes, or till pork spareribs are tender but with the meat still attached to the bone
  6. Remove bag of ingredients and stir in seasoning
  7. Serve Bak Kut Teh with fresh Chilli, dark soy sauce and plain rice or dough fritters
