Banana Bread

  • Bread:
  • 270 grams Hi-Protein Flour
  • 10 grams Brown Sugar
  • 10 grams Castor Sugar
  • ¼ teaspoon Salt
  • 1 teaspoon Instant Yeast
  • 150 grams Milk
  • 15 grams Canola Oil
  • 100 grams Overripe Bananas
  • Butterscotch:
  • 150 grams Butter
  • 500 grams Sugar
  • 240 milliliters Cream
  • Whipping Cream:
  • 2 cups Whipping Cream
  • 1 tbp Icing Sugar
  1. Banana Bread:
  2. Mash overripe bananas.
  3. Into the breadmaker pan, add in flour, white and brown sugar, salt, oil, milk and lastly the mashed bananas.
  4. Add yeast into the yeast dispenser.
  5. Use the bread function, and leave the bread baking for approximately 4 hours.
  6. When done baking, slice bread into 1 inch slabs.
  7. In a heated pan over medium heat, melt some butter just enough to toast each slice.
  8. Place one side of the bread down onto the butter and swirl it on the pan to evey toast.
  1. Butterscotch:
  2. In a pot over high heat, add in sugar and continuously stir until it caramelizes and turns into a deep brown.
  3. Lower heat and add in butter. Continue to stir.
  4. Add in cream, whisk it in. Turn off heat.
  5. When its cooled, pour it into a piping bag and set aside for final assembly.
  1. Whipping Cream:
  2. Add whipping cream into a cold metal bowl and whisk.
  3. Gradually add in icing sugar while still whisking.
  1. Assembly:
  2. Dress a plate with some butterscotch sauce with the piping bag.
  3. Place a slice of toasted banana bread on the plate, add 2 tablespoons of whipped cream on the toasted side.
  4. Sprinkle some icing sugar on the bread and serve.
