Banana Coconut French Toast

  • 3 Eggs
  • 200 millilitres Coconut milk
  • ¾ cup grated Coconut
  • ⅛ teaspoon Salt
  • 4 thick slices White bread
  • 2 Bananas
  • For the Gula Melaka Syrup:
  • 300 grams Gula melaka [Palm Sugar]
  • 150 millilitres Water
  1. Mash the bananas, and sandwich two slices of bread with mashed banana
  2. Beat the eggs with coconut milk, grated coconut and salt, then dip both sides of the banana sandwich into the egg mixture
  3. Heat up some butter in a pan over a medium high heat and fry until golden brown
  4. Heat the gula melaka [palm sugar] and water up and bring to a boil, simmering until the gula melaka [palm sugar] is dissolved. Pour over the French toast
