Banana Lumpia with Coconut Caramel Sauce

  • 20 Spring roll wrappers
  • 8-10 Bananas
  • ¼ teaspoon ground Cinnamon
  • 2 cups Vegetable oil for frying
  • 1 cup of Water
  • For the caramel:
  • 240 millilitres Coconut milk
  • 180 millilitres Brown sugar
  • Generous pinch of Salt
  1. In a saucepan, heat up the coconut milk, brown sugar and salt. Leave to simmer for 20-30 minutes, until thickened and caramelised
  2. Peel the bananas, slice them lengthwise, then cut into rough chunks. Toss them with the ground cinnamon
  3. Lay out one spring roll wrapper, spoon some banana filling into it and dab the surrounding spring roll wrapper with some water. Roll up into a tight parcel
  4. When all the lumpia are rolled, heat the vegetable oil up over a medium-high heat. Fry the lumpia in batches for 3-5 minutes. Serve with the coconut caramel
