Basil Prawn Stir-Fry

  • 400 grams Prawns, trimmed and deveined
  • 1 thumb-sized piece of Ginger, peeled and sliced
  • 4 cloves Garlic, peeled and sliced
  • 1 Red chilli, sliced
  • 1 cup Basil leaves
  • 2 teaspoons Cornstarch, dissolved in 1 tablespoon water
  • Sauce:
  • 1 tablespoon Light soy sauce
  • 1 teaspoon Dark soy sauce
  • 2 teaspoons Sugar
  • 4 tablespoons Water
  • 1 teaspoon Sesame oil
  1. In a wok or large frying pan, heat up 1 tablespoon of cooking oil over a high heat. Saute the garlic, ginger and chilli together until fragrant, then add the prawns
  2. Stir fry until the prawns turn red, then add all the sauce ingredients. Simmer until the prawns are cooked through. Stir in the basil leaves and serve
