BBQ Seafood Platter with 2 Dipping Sauces

  • Coconut Chilli Fish:
  • 1 whole Fish about 500-600 grams (Seabass or Pomfret) cleaned and gutted
  • ½ cup Coconut milk
  • 2 Red chillies
  • 2 Bird's eye chilli
  • 2 cloves Garlic
  • 2 Shallots
  • Salt
  • Long piece Banana leaf/foil
  • 2 tablespoons oil
  • Sweet Soy Sauce with Chilli Squid:
  • 300 grams Squid gutted
  • 2 cloves Garlic
  • 2 Bird's eye chilli
  • 1 tablespoon Salt
  • 4 tablespoons sweet Soy sauce
  • Turmeric Prawn:
  • 500 grams large Prawns, deveined with head and shell on
  • Salt
  • 2 teaspoons Turmeric powder
  • 2 tabs Cooking oil
  • Dipping sauce:
  • 1 Shallot
  • Remainder of the Squid Marinate
  • 6 tablespoons Budu (Fermented Anchovy Sauce) – if you cant find this, opt for Fish Sauce or 4 Table Salt
  • 1 Lime
  • 1 Bird's eye chilli (optional)
  • Variety of Vegetables:
  • Serai kayu (Indonesia Bay Leaves)
  • Petai (stinky beans)
  • Long beans
  • French beans
  • Tomato
  • Any fresh raw vegetable
  1. Coconut Chilli Fish:
  2. Slice up red chilli and bird eye chilli. Mince up garlic and shallot
  3. Place all sliced and minced ingredients in a pestle and mortar. Pound until it turns into pulp. Add in a pinch of salt and pour in coconut milk
  4. Marinate the fish with the mixture. Add a couple of tablespoon of oil on the banana leaf and spread it, place marinated fish on top of the oil coated leaf and then wrap it up firmly
  5. Place the fish on a BBQ grill and cook for 15-20 minutes. Remember to flip it every 10 minutes
  1. Sweet Soy Sauce with Chilli Squid:
  2. Mince up garlic and bird's eye chilli. Place it in a bowl, mix it up with salt and sweet soy sauce
  3. Pull the squid leg out and cut the beak off. Slit the squids head flat and score both sides
  4. Drizzle half the sauce on the squid and allow it to marinate for 2 minutes. Keep the remainder of the marinate for the dipping sauce
  5. Place the squid on a grill to cook for 5-6 minutes. Cook each side for approximately 3 minutes
  1. Turmeric Prawn:
  2. Sprinkle generous amount of salt on prawns. Add in turmeric powder and cooking oil. Mix and coat it thoroughly
  3. Place prawns on a grill to cook for 5-6 minutes. Cook each side for approximately 3 minutes.
  1. Dipping sauce:
  2. For the sweet dipping sauce, chop up a shallot and add it to the sweet soy chilli sauce
  3. Budu dipping sauce, add it to a bowl and squeeze in the juice of 1 lime, mix well and add in bird's eye chilli that has been slit in the middle
  1. Chef’s tip:
  2. For serving, place all the cooked seafood on a platter dish. Serve a variety of vegetables by the side. Garnish with lime wedges. Scoop the sweet soy sauce with chilli in a bowl as a dipping sauce. May also serve with other dipping sauces, like budu
