Black Pepper Beef Udon

  • 250 grams thinly sliced Beef
  • ½ Yellow onion, thinly sliced
  • 2 Sspring onions, chopped - green and white parts separated
  • 2 packets frozen or vacuum-packed Udon, blanched and drained
  • ½ tablespoon Cornstarch, dissolved in 1 tablespoon water
  • For the sauce:
  • 6 cloves of Garlic, peeled and chopped finely
  • 1 tablespoon Light soy sauce
  • 1 tablespoon Dark soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Sugar
  • 2 tablespoons ground Black pepper
  • 2 tablespoons Water
  1. First, mix all the sauce ingredients together until combined
  2. Heat up 2-3 tablespoons of cooking oil in a wok or large frying pan. Quickly fry the beef until just cooked, then remove and set aside
  3. In the same pan, fry the sliced yellow onion for 30 seconds, then pour in the sauce. Add the udon noodles and stir to cook. Add a little more water if the sauce is looking too dry
  4. Pour in the cornstarch solution and let the sauce boil and thicken
  5. Finally, add the cooked beef to the noodles, as well as the chopped white part of the spring onions
  6. Pour onto a plate and garnish with the green spring onions
