Ingredients
  • Black Rice:
  • 1 pack beef bacon, roughly chopped
  • 2 tablespoons oil
  • 1/ 2 onion, chopped
  • 4 cloves garlic
  • 113 grams black rice (½ cup)
  • 500 milliliters fish broth
  • 1 tablespoon squid ink
  • Calamari:
  • 2 squids
  • 2 eggs
  • 4 tablespoons plain flour
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ coriander seeds
  • &frac116; teaspoons pepper (a pinch)
  • &frac116; sugar (a pinch)
  • Serving:
  • Mayonnaise
  • Fried shallots
  • Ikura
Method
  1. Black Rice:
  2. Sauté the chopped beef bacon until a little bit crispy
  3. Add onion, then garlic until fragrant
  4. Add the black rice
  5. Pour the broth and cook with low to medium heat until simmer
  6. Mix with the squid ink.
  7. Cook the rice in a low heat and let it simmer for about 40 mins
  1. Calamari:
  2. Mix the plain flour with cayenne pepper, salt, coriander seeds, pepper and sugar
  3. Prepare the egg wash
  4. Cut the squids
  5. Coat the calamari with flour, then egg wash, and flour again
  6. Deep fry it
  7. Serve the calamari with black rice, mayonnaise, fried shallots and Ikura
