Braised Eggs in Smoky Spicy Tomato Sauce

Ingredients
  • 1 small tin of San Marzano tomatoes (or other good quality tomato)
  • 4 eggs
  • 1 teaspoon Turmeric
  • 1 teaspoon Smoked paprika
  • 1.5 teaspoons whole Cumin seeds (or ground if unavailable)
  • Rice vinegar or apple cider vinegar
  • 1 medium White onion, chopped
  • 2 cloves Garlic
  • 1 Red or Yellow bell pepper, diced
  • 2-4 teaspoon Sugar
  • Sea salt
  • Cilantro
  • Mint or dill
  • Good quality crusty bread for serving
Method
  1. Heat oil in a large pan
  2. Add cumin seeds and let them sizzle in oil for about 1 min
  3. Add chopped onions and garlic
  4. Sautee for a few minutes and add turmeric and paprika
  5. Cook until onions are translucent
  6. Add tomatoes
  7. Bubble away on medium-high for 4-5 min
  8. Season with salt
  9. Taste, and season with vinegar and sugar from perfect balance
  10. Sauce should be pungent and “pop” with flavor
  11. Make 4 wells in the sauce, and carefully crack an egg in each
  12. Cook on low until eggs have set (sunny side up)
  13. Before serving, top the dish with chopped cilantro and mint or dill
  14. Serve with warm crusty bread
