Ingredients
  • Braised Oxtail
  • 1 kilogram Oxtail
  • 1 Carrot
  • 1 Onion
  • 2 ribs Celery
  • 1 stick Leeks
  • 2 cloves Garlic
  • 100 grams Tomato coulis
  • 500 millilitres Red wine
  • 1 litre Beef stock
  • Potato Noodles
  • 1 Russet potato
  • 100 grams Butter
Method
  1. Braised Oxtail:
  2. Season and pan fry the oxtails in vegetable oil until brown
  3. Chop the garlic and dice all the vegetables
  4. In a pot, sauté the vegetables in corn oil until browned lightly
  5. Add in the oxtails, red wine, tomato coulis and beef stock. Cover and simmer for 3 hours
  6. Remove the meat from the oxtails after cooked and add back to the sauce
  7. Adjust seasoning and reduce the sauce if necessary
  1. Potato Noodles:
  2. Peel the potatoes
  3. Using a turning slicer, fabricate the potatoes in noodles
  4. Sauté in some butter and season to taste
