Breakfast Polenta With Honeyed Fruits

  • 1 Mutsu or Granny Smith Apple, peeled, cored and cut into 1-inch dice
  • 2 tablespoons water
  • 1 Cinnamon stick
  • 3 whole Cloves
  • 2 whole Star Anise
  • 4 pitted Prunes
  • 3 tablespoons Honey
  • 2 fresh Peaches, peeled and sliced
  • 4 Plums, pitted and quartered
  • Breakfast Polenta
  • 3 cups 2% Milk
  • ½ Vanilla Bean
  • 6 tablespoons Cornmeal
  • Honey to taste
  • Yogurt, for serving
  1. Place apples in a saucepot with water and spices and bring up to a simmer over medium heat
  2. Once simmering, add prunes and honey
  3. Simmer gently for about 10 minutes, stirring occasionally
  4. Add peaches and plums and continue to simmer until fruits are tender, about 5 minutes
  5. Serve fruits warm or at room temperature
  6. For polenta, bring milk and scraped seeds from vanilla bean up to a simmer over medium heat
  7. Whisk in cornmeal and quickly switch to a wooden spoon
  8. Turn down heat to medium-low and stir constantly until polenta is tender and thickened
  9. Stir in honey to taste
  10. To serve, ladle polenta into bowls, top with honeyed fruits and garnish with a dollop of yogurt
