  • ¼ cup Unsalted Butter
  • ½ cup Buttermilk
  • ¼ cup Sour Cream
  • Salt and Pepper
  • ⅓ cup finely chopped Green Onion
  1. Peel potatoes and cut into 1-inch cubes
  2. Place potatoes into cold, salted water and bring up to a boil, boiling, uncovered, until potatoes are tender, about 15 minutes
  3. Drain well, then cover to keep warm
  4. Return pot to low heat and melt butter
  5. Using a ricer, press potatoes into pot and stir
  6. Stir in buttermilk and sour cream just until warmed and season to taste
  7. Stir in green onions immediately before serving
