Cajun Shrimp Love Sauce

  • Cajun Shrimp Love Sauce:
  • 1.36 kilograms (1500grams) of large Shrimps
  • Marinade:
  • ¼ cup - (60ml) of Olive oil
  • Juice of 2 Lemons
  • 3 teaspoons - (45ml) Cajun seasoning
  • Cajun Love Sauce:
  • ⅔ cup - (150ml) of Extra virgin olive oil
  • 3 large chopped Celery ribs
  • 6 chopped Green onions
  • 4 tablespoons - (60ml) of Dijon mustard
  • 4 tablespoons - (60ml) of Ketchup
  • 3 tablespoons - (45ml) of Lemon juice
  • 2 tablespoons - (30ml) of Capers
  • 3 tablespoons - (45ml) of freshly chopped Cilantro
  • 2 teaspoons - (10ml) of Horseradish
  • 1 teaspoon - (5ml) of Cajun seasoning
  • Salt to taste
  • 1 cup of Hickory wood chips soaked in cold water for 30minutes
  • 2 cups of dry Hickory wood chips
  1. Cajun Shrimp Love Sauce:
  2. Peel shrimp, leaving their tails on. Using medium size bowl toss shrimp with olive oil, lemon juice, Cajun seasoning and let marinate in the fridge for 20 minutes
  3. Remove the shrimp from the marinade and let them rest of 10 minutes to come to room temperature
  4. Preheat barbecue to the temperature of 220°F (110°C)
  5. Squeeze the water from the wet chips and place them in the center of a large piece of tin foil
  6. Add the dry chips and mix
  7. Fold the foil into a sealed pouch
  8. With a fork poke holes in both sides of the pouch from which the smoke will escape
  9. The more holes - the more smoke!
  10. Turn one burner to medium high heat and place the woodchip pouch directly over the flames.
  11. Turn the other burners off
  12. Once the grill is smoking, quickly place the shrimp directly over the grills that are off
  13. Smoke shrimp with indirect heat for 10 -15 minutes or until shrimp are evenly pink and slightly caramelized on the outside
  14. Meanwhile add all ingredients for the Cajun Love Sauce to a blender and puree until smooth.
  15. Refrigerate until ready to use
  16. Combine the smoked shrimp with Cajun Love Sauce in a serving dish and chill for 1 and up to 2 hours
  17. Serve and enjoy!
  1. Cajun Shrimp Love Sauce:
  2. Add all ingredients (except wood chips) for the Cajun Love Sauce to a blender and puree until smooth
  3. Refrigerate until ready to use
