Cannelini Bean Hummus
Cannelini Bean Hummus "with Quick-Pickled Radishes and Onions"

  • 1 tin good quality Cannellini beans, rinsed
  • Extra Virgin Olive oil
  • 1 Lemon
  • 1 large stem of Rosemary
  • 1 large clove Garlic
  • Sea salt
  • ½ Red onion, sliced thinly
  • 6 Red radishes, sliced thinly
  • White vinegar
  • Sugar
  • 1 teaspoon Black peppercorns
  • Fresh Mint
  1. Place sliced radishes and onions in a bowl
  2. Add 1/4 cup each of water and vinegar
  3. Add sugar & salt
  4. Marinade the radishes and onions in the pickling liquid for a few minutes. Set aside
  5. In a small pan, heat 1 tablespoon extra virgin olive oil, garlic cloves and rosemary sprig on low heat for 8-10 min (idea is to infuse oil with flavor of garlic and herb)
  6. Remove rosemary from oil
  7. Place beans into food processor and add flavored oil and garlic clove
  8. Add juice of half a lemon, sea salt and black peppercorns
  9. Process until smooth, like hummus. Add a bit of water while processing if mixture gets too stiff
  10. Pile bean purée onto the center of a serving plate, and spread towards outer edge into a thick layer
  11. Scatter pickled vegetables artfully on top of beans
  12. Roughly chop mint and scatter over top
  13. Finish with lemon zest and a final drizzle of olive oil
  14. Serve with warm toasted pita
