Caramelized Banana Parfait

Ingredients
  • 8 Bananas, peeled
  • 1 litre Double/Heavy cream
  • 8 tablespoons Icing sugar
  • 4 tablespoons unsalted Butter
  • ⅓ cup dark Brown sugar
  • ½ teaspoon ground Nutmeg
  • ½ cup Dark rum (or replace with ¼ cup Pineapple juice mixed with ¼ cup water)
  • ½ cup Water
  • 2 packets (400g) Ladyfinger Biscuits
Method
  1. Slice 4 of the bananas. In a saucepan, melt the butter with the nutmeg and dark brown sugar until combined and slightly caramelised. Add the banana slices and toss to cover. Add the rum (or pineapple juice mixed with water), and cook for a minute or two. If you're feeling brave, you can flambee the rum by tipping the pan to one side and letting the rum catch fire and cook off Take off the heat
  2. Remove the bananas to a bowl, leaving the sauce in the pan. Add the water to the pan and stir to mix. Set aside
  3. Place the 4 ripest bananas in a bowl and mash finely with a fork
  4. In a separate bowl, whip the cream with the icing sugar until fluffy and it holds peaks, then fold in the mashed banana
  5. Prepare your serving bowl. Dip the ladyfinger biscuits into the caramelised juices in the pan, then squish into the bottom of the serving bowl. Layer some bananas on top, then some of the banana mousse. Repeat the layers once
  6. Chill the mousse for at least 2 hours before serving
