Cardamom Fennel Brownies

  • 454 grams dark Chocolate
  • 283 grams Butter
  • 6 Eggs
  • 1 cup Sugar
  • ½ teaspoon Fennel seeds
  • ½ teaspoon smoked Paprika
  • 1 tablespoon Fennel powder
  • ½ teaspoon Salt
  • 1 teaspoon Cardamom seeds
  • 1½ cup all purpose Flour
  • White Chocolate and Cardamom Ganache:
  • 500 grams white Chocolate
  • 1½cup 35% Whipping cream
  • 1 teaspoon ground Cardamom
  1. Preheat oven to 325° and grease and flour a 9-inch by 13-inch baking dish
  2. Place the chocolate and butter in the top of a double boiler and melt over low heat. Let cool slightly. Beat the eggs and sugar together until thick and pale yellow in colour. Add the cooled chocolate mixture and stir well to combine. Sift in the salt, spices and flour and stir well until completely combined. Pour into the prepared pan and bake for 30 minutes, or until an inserted toothpick comes out clean. Let cool
  3. Chop white chocolate and place into a heat proof bowl
  4. Place cream and ground cardamom in a small saucepan over medium heat. Bring to a boil Pour hot cream over white chocolate. Let sit for 30 seconds and then stir until it is very smooth
  5. Pour ganache over brownies and let cool completely until ganache is set. Cut into squares
