Ingredients
  • Cedar Planked Salmon:
  • 3 Cedar shingles broken into 8 X 6" pieces
  • ¼ cup Vodka (60ml)
  • ¼ cup Vermouth (60ml)
  • ¼ cup fresh Lemon juice (60ml)
  • 1 tablespoon prepared Horseradish - (15ml)
  • 1 clove Garlic, minced
  • 2 tablespoons Juniper berries - (30ml)
  • 2 sprigs fresh Thyme
  • Tarragon Mayonnaise:
  • 1 cup (250ml) White wine
  • 3 sprigs of fresh Tarragon
  • 1 cup (250ml) Mayonnaise
  • 2 drops of Tabasco - or to taste
Method
  1. Cedar Planked Salmon:
  2. Soak Cedar in cold water for 1 hour
  3. Mix all above ingredients and place in sealable plastic bag, add salmon and marinate in refrigerator for 1hour
  4. Preheat barbecue to 400°F (200 deg cel)
  5. Place soaked Cedar planks on grill rack until they start to smoke
  6. Reduce heat to 300°F (150 deg cel) and place salmon pieces on to cedar
  7. Close lid on barbecue and cook for approximately 15 minutes
  8. Salmon should have a golden colour and flake with ease with clear juices running through
  9. Serve with tarragon mayonnaise and enjoy!
  1. Tarragon Mayonnaise:
  2. In a sauce pan combine white wine and tarragon sprigs, on medium heat reduce to 1/4 cup.
  3. Strain and chill
  4. Mix the chilled reduction with mayonnaise and add 2 splashes of Tabasco sauce
  5. Refrigerate until time to serve
