Cheesy Baked Eggplant Cigars

Ingredients
  • 1 big eggplant
  • Salt
  • Filling:
  • 3 garlic cloves
  • 20 grams mushroom
  • 2 tablespoons oil
  • 2 sundried tomatoes
  • 20 grams spinach
  • 100 grams minced chicken
  • 1 tablespoon miso
  • Pepper, to taste
  • ¼ teaspoon sugar
  • ½ teaspoon butter
  • Sprinkle:
  • 4 tablespoons breadcrumb
  • 2 tablespoons parmesan cheese
  • 1 teaspoon black pepper
  • Mozzarella cheese
  • Parsley, for serving
  • Edible flower, for serving
Method
  1. Filling:
  2. Pour oil into a pan
  3. Sauté the garlic until it's fragrant
  4. Add the mushroom, spinach, minced chicken & miso. Cook it until the chicken is fully cooked.
  5. Season it with pepper and sugar
  6. Put in butter to add more flavor
  7. Add sun dried tomatoes
  1. Sprinkle:
  2. Mix breadcrumbs, parmesan cheese, and black pepper in a bowl
  1. Cheesy Eggplant:
  2. Cut the eggplant into thin pieces
  3. Sprinkle some salt on the eggplant so the liquid is drained and let it sit for a while
  4. Pat the eggplant dry and wash it
  5. Roll the filling inside the eggplant
  6. Put it in an oiled ramekin
  7. Put the sprinkle on top of it
  8. Drizzle a little bit of oil
  9. Put mozzarella cheese on top of it
  10. Add some black pepper
  11. Baked in the oven at 180 C for 35 minutes
  12. Add some parsley and edible flower and ready to serve
