Ingredients
  • 500 grams skinless Chicken Breast
  • 3½ cups Coconut milk
  • 8 slices Young Galangal, peeled
  • 1 stalk Lemongrass
  • 6 Kaffir Lime Leaves
  • 3 Shallots
  • 9 red and green Thai Chillies
  • 1 tablespoon Palm Sugar
  • 3 tablespoons Lime Juice
  • 300 grams Straw Mushrooms
  • 3 tablespoons Fish Sauce
  • Corianders Leaves for garnish
Method
  1. Cut chicken breast into bite sized chunks
  2. Cut and smash shallots, lemongrass, Chillies and galangal
  3. Boil coconut milk and water in medium heat then reduce to medium-low
  4. Add galangal, lemongrass, shallots and kaffir lime leaves into the pot and stir well
  5. Add chicken chunks and straw mushrooms. Cook until chicken is tender
  6. Season with palm sugar, fish sauce, lime juice and Chilli before serving
