Ingredients
  • 2 boneless chicken thighs with skin
  • 4 tablespoons water
  • 3 tablespoons coconut milk
  • Pomelo, for serving
  • Cherry tomatoes, for serving
  • Curry Sauce:
  • 6 shallots
  • 2 garlic
  • 1 chili padi
  • ½ teaspoon cumin
  • &frac116; teaspoons coriander powder (a pinch)
  • &frac116; teaspoons cinnamon powder (a pinch)
  • 3 curry leaves
  • 2 centimeters turmeric
  • 2 centimeters ginger
  • 2 centimeters galangal
  • 2 lemongrasses
  • 3 tablespoons oil
  • Rujak Sauce:
  • 50 grams palm sugar, sliced
  • 3 tablespoons tamarind water
  • 1 teaspoon terasi (shrimp paste)
  • 50 grams fried peanut, crushed
  • Salt to taste
Method
  1. Grilled Chicken:
  2. Marinate the chicken with a bit of the curry sauce. Stab it with a fork so the sauce gets inside the chicken
  3. Season the chicken with salt, pepper, and sugar
  4. Leave the chicken for 40 minutes in the fridge
  5. After 40 minutes, grilled the chicken in a grilled pan, skin side first
  6. Season the chicken with salt, then flipped until it's fully cooked
  7. Serve it with white rice, curry sauce, rujak sauce, pomelo and cherry tomatoes
  1. Curry Sauce:
  2. Blend all the curry ingredients
  3. Sauté the remain curry sauce in a pan until it's fragrant
  4. Add water
  5. Season the curry with salt and sugar
  6. Add coconut milk
  7. Cook it until it's boiled
  1. Rujak Sauce:
  2. Mix all rujak sauce ingredients in a bowl.
