Chicken Penne Soup with Pesto

  • 2 Chicken stock cubes
  • 50 grams Penne
  • 1 Carrot
  • 1 Zucchini
  • 1 stalk Celery
  • 1 Onion
  • 1 tablespoon Thyme
  • Salt and Pepper to taste
  • 1 cooked Chicken breast and 1 leg shredded
  • 2 tablespoons prepared Pesto
  • 3 handfuls fresh Spinach
  1. In a large pot, heat oil and add chopped onion and thyme. Sauté for 3-4 min
  2. Cut carrots and celery into bite sized pieces and add to pot
  3. Season with salt and pepper
  4. Add chicken stock cubes and water. Bring to boil.
  5. Add handful of penne to pot
  6. When penne is almost done, add chicken
  7. Bring to boil and make sure everything is cooked through and tender
  8. To serve, put some spinach in bottom of bowl
  9. Spoon soup over and top with pesto
