Chilli Assam Prawns

  • 2 tablespoons Cooking oil
  • 500 grams large Prawns, deveined, shell intact
  • 5 Garlic cloves, chopped
  • 3 Shallots, chopped
  • 10 Dried chillies, deseeded
  • 2 tablespoons Thai chilli sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Assam Jawa (Tamarind) paste
  • Sugar, to taste
  • Fish sauce, to taste
  • 1 handful Thai basil leaves
  1. In a wok, heat the cooking oil, then fry the prawns with the shell over high heat. Once cooked, carefully remove from wok and drain on kitchen paper and set aside
  2. Using the same wok, sauté the garlic, shallots and dried chilli until fragrant. Then add in the Thai chilli sauce, oyster sauce and Assam Jawa paste
  3. When everything is mixed well, add the cooked prawns to the sauce and stir
  4. Season with fish sauce and sugar
  5. Then as a final touch, add in the Thai basil leaves, toss for a couple of minutes then serve
