Chilli Glazed Salmon

  • 100 grams Salmon fillet
  • 100 grams Thai chilli sauce
  • 3 leaves Kaffir lime finely chopped
  • 2 diced Shallot
  • 2 chopped Lemongrass
  • 2 Lime
  • 2 tablespoons Brown sugar
  • 2 cloves finely chopped Garlic
  • 100 grams Butter
  1. Put in some butter, gently cook the garlic, shallots, lemongrass and kaffir lime until lightly browned and aromatic
  2. Add in the thai Chilli sauce and stir well
  3. Add in the brown sugar and the juice from 2 limes to taste
  4. Season with salt and whisk in the remaining butter into the glaze
  5. For the salmon, season with salt and pepper Pan fry in a pan with corn oil for around 3 minutes on both sides. Brush generously with the chilli glaze
