Ingredients
  • 2 Asian Eggplants (long skinny ones)
  • 2 Scallions
  • 1 tablespoon Chilli oil
  • 6 cloves Garlic
  • 1 teaspoon Sesame oil
  • 1-2 teaspoon Soy sauce
  • 2 Red chillies
  • Cilantro leaves
Method
  1. Cut eggplant into 3 inch pieces
  2. Fill pot with 2-3 inches of water
  3. Place steamer on top of pot and bring water to the boil
  4. Place eggplant in steamer and steam for 10 min
  5. In the meantime, slice garlic and fry in a pan until crispy—set aside
  6. Chop scallions
  7. Arrange eggplant on plate
  8. Top with soy sauce, sesame oil, Chilli oil, cilantro leaves and a few sliced Chillies
  9. Sprinkle garlic chips over top
