  • 250 grams Butter
  • 200 grams Chocolate
  • 4 Eggs
  • 850 grams Sugar
  • 60 grams all-purpose Flour
  • 70 grams Cocoa powder
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 150 grams Butter
  • 240 millilitres Heavy cream (warmed)
  • 1 tablespoon Salt
  • 1 tub of vanilla Ice cream
  • 500 grams Strawberries (sliced into fans)
  1. Preheat oven to 180 degrees celsius
  2. Melt butter and chocolate together on a bain marie. Whisk to combine
  3. Whisk eggs and 350 grams of sugar together in a mixing bowl until sugar has dissolved and mixture turns into a pale yellow colour
  4. Add melted butter and choclate into the eggs and sugar mixture. Whisk to combine
  5. Sift flour, cocoa powder, baking powder, salt into the mixing bowl. Fold to combine
  6. Pour mixture into a lined baking tray. Bake in the oven for 35 minutes
  7. Once cooled, remove brownies from tray and cut into 16 squares
  8. To make the salted caramel drizzle, whisk 500 grams of sugar in a pot on medium heat until melted, and reaches a temperature of 160 degrees celsius
  9. Add butter and cream to the pot, and whisk away until well combined
  10. Season with salt, and leave to cool to room temperature
  11. To serve, top a brownie with ice cream, drizzle caramel sauce, and finish with a fanned strawberry
