Chocolate Hazelnut Cheesecake

  • Crust
  • 1 cup Graham cracker crumbs 250 mL
  • ⅓ cup ground Hazelnuts 80 mL
  • ¼ cup light Brown sugar, packed 60 mL
  • ¼ cup unsalted Butter, melted 60 mL
  • ½ teaspoon Vanilla extract 2 mL
  • Filling
  • 2 cups Whipping cream 500 mL
  • 170 grams semisweet Chocolate, chopped 175 g
  • 454 grams Cream cheese at room temperature 500 g
  • ¾ cup Sugar 190 mL
  • 1 tablespoon Cornstarch 30 mL
  • ½ cup Hazelnut liqueur 125 mL
  • 2 large Eggs 2
  • Cocoa powder, for dusting
  • Whole, toasted and peeled hazelnuts, for garnish
  1. For crust, preheat oven to 350 °F (180 °C) and grease a 9-inch (2.5 L) springform pan
  2. Pulse graham crumbs, hazelnuts and brown sugar in a food processor
  3. Add melted butter and vanilla extract and pulse until an even texture
  4. Press into bottom of prepared pan and bake for 7 minutes
  5. Allow to cool while preparing filling
  6. For filling, reduce oven temperature to 325 °F (160 °C)
  7. Heat cream to just below a simmer
  8. Pour hot cream over chopped chocolate and whisk gently until smooth and set aside
  9. In a bowl using electric beaters or with a mixer fitted with the paddle attachment, beat cream cheese until fluffy, scraping the sides of the bowl often
  10. While beating, slowly pour in sugar, again scraping the bowl often
  11. Beat in cornstarch
  12. By this time the filling should be looking a little more fluid
  13. Slowly pour in hazelnut liqueur and beat in eggs, one at a time
  14. Pour chocolate mixture into cheesecake filling and blend well
  15. Scrape filling into pan and bake for 30 minutes.
  16. Without opening the oven door, turn off the oven and leave cheesecake in another 30 minutes.
  17. Remove, let cool to room temperature, then chill overnight
  18. To serve, remove cheesecake from pan, dust top of cheesecake with cocoa powder and decorate with hazelnuts
