Cilantro and Coriander Chicken

Ingredients
  • 2 tablespoons grape seed oil
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon coriander seeds
  • 1 tablespoon garam masala
  • A pinch of salt and pepper
  • 2 tablespoons tomato paste
  • 4 chicken legs
  • 1 cup chopped cilantro
  • ½ cup crushed tomatoes
  • 3 cups chicken broth
Method
  1. Place a large skillet over medium heat and add oil
  2. When it is hot, add ginger and garlic and cook for 1 minute
  3. Add all the spices and cook for 30 seconds
  4. Stir in tomato paste and then add the chicken legs. Season with salt and let them cook for 5 minutes
  5. Add cilantro, crushed tomatoes and chicken broth and let it simmer until chicken is fully cooked, about 30 minutes
  6. Serve with plenty of sauce
