  • For Dough:
  • 2 cups warm water (just barely above body temperature)
  • 1 tablespoon instant yeast
  • 1 tablespoon honey or sugar
  • 2 tablespoons cornmeal
  • 3½ -4 cups all-purpose flour
  • 2 teaspoons salt
  • ⅓ cup olive oil
  • For Filling:
  • 8 strips bacon, cooked
  • 3 cups shredded honey mustard glazed chicken
  • 2 cups grated cheddar cheese
  • ⅓ cup chopped sundried tomato
  • Honey Mustard Glazed Chicken:
  • 13+½ pounds chicken
  • 2 tablespoons olive oil
  • Salt and pepper
  • 3 fresh thyme sprigs
  • ½ cup honey
  • ½ cup coarse grain mustard
  • 1 small onion
  1. For dough:
  2. Mix water, yeast, honey or sugar and cornmeal and let sit for 5 minutes. Stir in 3 1/2 cups of flour, salt and olive oil and mix (on low speed with a dough hook if using a stand-up mixer) until dough comes together
  3. Add remaining 1/2 cup of flour if dough is sticky and clings to the side of the bowl. Continue kneading on low speed in mixer or by turning out and kneading by hand on a lightly floured surface until elastic
  4. Place dough in a lightly oiled bowl, cover and let sit in a draught-free place for an hour.
  5. Once rested and doubled in size, turn dough out onto a lightly floured surface and roll out into a sheet, just over 1/2-inch thick and 18 by 9 inches in size
  6. Arrange bacon slices lengthwise across dough, sprinkle shredded chicken over and top with grated cheese and sundried tomato
  7. Roll dough up by the short end and place in a greased 9-x-5-inch loaf pan. Cover dough with a tea towel and let rest for 30 minutes
  8. Preheat oven to 375°F
  9. Bake Club Sandwich Roll for 20 minutes at 375°F, then reduce oven temperature to 350°F and bake another 25 minutes. Let Roll cool for 15 minutes, then turn off pan to cool for 30 minutes
  1. Honey Mustard Glazed Chicken:
  2. Preheat oven to 325°F
  3. Place chicken in a heavy-bottomed roasting pan and drizzle with oil
  4. Sprinkle with salt and pepper
  5. Insert thyme sprigs into cavity of chicken, cover and roast for 20 minutes
  6. Uncover and continue roasting until an internal temperature (taken between thigh and breast) reads 180°F, about 1 1/2 hours
  7. While chicken is roasting, prepare glaze
  8. Whisk honey and mustard
  9. Purée onion in a food processor and stir into honey mustard
  10. During last 45 minutes of cooking, baste chicken with honey mustard, basting every 10 to 15 minutes
  11. Alternately, chicken can be taken off the bone, cut up and tossed with honey mustard glaze
