Coconut Pancakes and Gula Melaka Drizzle (Lempeng Kelapa dengan Sirap Gula Melaka)

Ingredients
  • 2 kampung (free range) Eggs
  • 2 cups Self raising flour
  • 2 kampung (free range) Eggs (eggs yolks separated from whites)
  • 2 tablespoons fine White sugar
  • 4 tablespoons organic Coconut oil
  • 1 cup Coconut milk
  • 1 cup warm Water
  • 100 grams good quality Gula melaka
  • Sea salt
Method
  1. In a mixing bowl add in flour, white sugar, eggs yolks, coconut oil and 1/2 cup coconut milk and some water until smooth
  2. Beat eggs whites until stiff and fold into the pancake flour mixture and taste batter to see if you are happy with the sweetness
  3. In a non stick pan, add in a dash of coconut oil, and put a ladle of the pancake mixture and flip when bubbles appear on the top of the pancake. Repeat until you make enough pancakes
  4. In a small pot, add in gula Melaka, remaining coconut milk and cook until melted
  5. Place pancake and drizzle gula Melaka syrup and sprinkle with sea salt
