  • 80 grams Cocoa powder
  • 190 grams Plain flour
  • ½ teaspoon Salt
  • ¼ teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 115 grams unsalted Butter
  • 300 grams Caster sugar
  • 2 Eggs
  • 120 millilitres Coffee
  • 120 millilitres Milk
  • For the frosting:
  • 240 millilitres Milk
  • 5 tablespoons Plain flour
  • 200 grams Caster sugar
  • 130 grams unsalted Butter
  • 1 teaspoon Vanilla extract
  • To garnish:
  • Cookies
  1. Preheat the oven to 180C
  2. Sift the cocoa powder, flour, salt, baking soda and baking powder into a bowl. Using a standing mixer or electric mixer, beat the butter and sugar together until creamy. Add the eggs one at a time and mix
  3. Mix the coffee and milk together
  4. Add half the dry ingredients into the butter mixture, then the coffee and milk. Finally, mix in the remaining dry ingredients. Divide the mixture into two prepared cake pans and bake for 25 minutes. Cool
  5. To make the frosting, whisk the milk and plain flour together in a pan over medium heat and stir until thickened. Allow to cool completely. In an electric mixer, beat the butter and sugar until fluffy. Add the milk and flour mixture and the vanilla to the butter and whisk till fluffy Sandwich the two cakes with the frosting and top it as well. Garnish with chocolate cream sandwich cookies
