Ingredients
  • 1 tablespoon Garlic, crushed
  • 4 tablespoons Lemongrass (dried)
  • 4 tablespoons Galangal (dried)
  • 1 tablespoon Coriander Seeds, roasted & ground
  • 1 pinch Nutmeg
  • 1 tablespoonp White Pepper
  • 1 tablespoon Beef Stock
  • 40 millilitres Coconut Milk
  • 2 Eggs
  • 100 grams Peanut Paste
  • 100 grams Rice
  • 500 millilitres Water
  • Salt
  • Sugar
  • Meatball
  • 250 grams minced Meat
  • 100 grams cooked Oxtail/ Soft Bones/
  • 50 millilitres Vegetable Oil
  • Garnish
  • Fried Shallots
  • 3-4 Lime
  • Spring Onions
  • 1 large Red Chilli
Method
  1. Caramelise the short ribs in a pan until golden. Roast the spice until fragrant
  2. Place ingredients into a pot bring to a boil and gently simmer, cover for 3 hours until ribs are cooked
  3. Remove the ribs, cool and slice. Very finely slice the tripe, strain the stock, reduce and season with fish sauce
  4. Season the tripe and beef with Chilli jam. Place in to a bowl, garnish with herbs, celery, scallion and very finely diced Chilli, to one side of the bowl. pour hot broth over the beef and serve
  5. To make the Chilli Jam, Blitz the ingredients, caramelise sugar, cook out. Season with fish sauce and soy and lime
