Courgette Pasta
Savour this quick and easy vegetarian recipe by Siba Mtongana from Siba's Table.

  • 1 tablespoon Olive oil
  • 2 cloves Garlic, crushed
  • 6 sprigs Thyme leaves
  • 800 grams Courgettes, spiralled
  • Sea salt and freshly ground black pepper
  • 50 grams toasted pine nuts
  • 1 tablespoon Basil leaves
  1. Heat the oil and sauté the garlic
  2. Add the courgette spirals and cook for 3-5 minutes until just cooked - but not over cooked
  3. strip the thyme leaves from their stems
  4. Season with salt and pepper; serve with the lamb chops and top with pine nuts and basil leaves

NB if you don’t have a vegetables spiraller, use a julienne peeler, or cut the courgettes into really thin slices and then cut in to long, thin strips
