Ingredients
  • Crispy Noodle:
  • 300 grams dry Rice Vermicelli Noodle
  • 3 cups Vegetable oil
  • Stir Fry Prawns:
  • 400 grams Prawns
  • 2 cloves Garlic
  • 1 centimetre Ginger
  • 2 Bird's eye chilli
  • 1 stick Lemongrass
  • 1 tablespoon of Sugar
  • ¼ cup Coconut water
  • 1 teaspoon Corn flour
  • ½ cup Green bean (or any Vegetable. eg. Pea shoots, Broccoli)
  • 1 Carrot
  • ½ cup Black mushroom (or any Mushroom. eg. Shitake Mushroom)
  • 1 stalk Spring onion
  • 1 tablespoon Cooking oil
  • 1 tablespoon Chilli jam/ Chilli paste
  • 1 tablespoon Oyster sauce
  • 2 teaspoons of Fish sauce
  • Salt
  • Brown sugar
  • Black pepper
Method
  1. Break or use a pair of scissors to cut the dry rice vermicelli noodle into a length half of the serving plate
  2. In a wok, add in vegetable oil. Let the oil heat up. Put in a strain or two of noodle to test the heat of the oil. If the noodle cooks and expends immediately, the oil is hot enough
  3. Deep fry the noodle and drain out the excess oil with a strainer or kitchen towel. Set aside on a serving plate
  4. Slice up green beans, lemongrass and bird's eye chillies. Julienne carrot into match sticks sizes. Cut ginger into thin strips. Tear up black mushroom into bite sized pieces. Mince up garlic cloves. Chop up white part of spring onion for stir-fry, cut green part of spring onion into strips for garnish
  5. Peel off the head and shell of the prawns. De-vein, butterfly cut the back of the prawns. Sprinkle on salt, brown sugar and black pepper, mix it up. Add chilli jam, oyster sauce and fish sauce, mix it thoroughly.
  6. Heat up a pan and add in cooking oil. Put in ginger, lemongrass, garlic, white part of spring onion and chilli. Stir-fry until garlic turns translucent. Add prawns into the pan, add coconut juice into the bowl of prawn’s mixture to cleanse the bowl then pour it into the pan. Add in vegetable and stir-fry for 6-7 minutes
  7. In a small bowl, put in 1 tablespoon of corn flour, mix it with water and pour it into the pan. Turn off the stove, add in the green part of spring onion and stir it.
  8. Scoop up the stir-fry prawns and serve it on top of crispy noodle
