Crispy Pork Flake Adobo

  • 1 kilogram medium cut Pork
  • ½ cup Soy sauce
  • ½ cup Vinegar
  • 2 tablespoons Sugar
  • 2 cups Chicken broth
  • 6 cloves chopped Garlic
  • 1 chopped Onion
  • 8 Bay leaves
  • 1 tablespoon Peppercorn
  • 2 tablespoons Oil
  1. In a pan sauté onion and garlic.
  2. You can start a sauté in a cool pan and let it come up to heat, that way you don't have to caramelize onion and the garlic too quick
  3. When your onion and garlic becomes translucent that's a perfect time to add vinegar and soy sauce
  4. Just to catch up the acid of the vinegar add sugar it's nice when reduce down, then add bay leaf and peppercorn
  5. Mix it until the flavor has developed and then add pork
  6. Mix until everything is well coated and when the sauce is almost dry put the chicken broth and bring it to a big boil then turn it to simmer up to 45 minutes
  7. After simmering and it's perfectly done, looks nice in golden brown turn off the heat
  8. Then transfer it to a plate and start to shred the pork
  9. On the same pan put the pork flakes and fry it with its own natural cooking fat so you don't need to add more oil on it
  10. But be very careful you don't burn it mix it well because once it starts brown it will go very quickly
  11. When its done put it on a plate and best serve with fried rice
